Mac & Cheese for Life

When I was in high school, I made an awful lot of Kraft Mac N Cheese for myself. It served as breakfast, lunch, snack, midnight snack. Whatever I needed. Growing teens need more food and I was especially fond of creamy sauces on pasta. PASTA!!!!

For a few months now, the vegan forums online have been buzzing about the release of Earth Balance’s mac n cheese in a box… just like the old Kraft stuff… but vegan and probably a little healthier.

So, when I couldn’t find it, I went to the source:

Screen Shot 2014-07-31 at 11.01.05 AMI waited a few weeks (or what felt like a few weeks) and my Whole Foods still didn’t have it on the shelves. I asked the employees and they had no idea what I was talking about.

Then one day…. there it was!

boxesI spotted it from two aisles over… crazy mac and cheese lady that I am. I got both flavors because, DUH!

I’ve since tried out both flavors (cheddar with frozen peas added and white cheddar plain)

The verdict? Really yummy. I don’t recommend eating the whole box by yourself (I regret that), but they were really tasty. A great treat or something handy to have in your pantry for food emergencies.

I let Tony have a taste of the white cheddar flavor and he almost refused to give the bowl back to me. “Please, can I have my breakfast back?” He laughed, took a few more bites and then handed it back.

Earth Balance mac n cheeeSeems I will forever be in search of the perfect vegan mac n cheese. It was my favorite pre-vegan food for all the obvious, carb-ridden, cheese-loaded reasons.

If you don’t care for boxed stuff (and really it shouldn’t be a staple in anyone’s diet), here is my favorite vegan mac n cheese recipe. It’s also pretty guilt-free.
