Kale Obsession

Spammers are getting mean! Every day I go through the hundreds of spam comments I get on here and delete. Most of them are a bunch of gobbledy-goop nonsense, but every now and then I get one that is coherent.

Today, I got one that basically called me a whiney attention-whore. Thanks spammer. What’s funny, though, is that as I was reading it, I was actually getting upset. I had to remind myself that this “person” spams blogs with “links” to cheap brand name tennis shoes. Loser.

In other news, I finally came to the realization that Target really isn’t all that vegan friendly. I realize they’re not a grocery store, but they are trying. Here’s the thing, I was looking for soup today and they only had chicken flavor. Really? Now, they do carry some Amy’s products, most of which are not the vegan items. They also carry Morning Star Farms products (all non-vegan), and the gross flavors of Gardein chicken. Props to them for carrying my newest obsession:

My other latest obsession? Raw kale salad. I posted a recipe a few days ago and have since made several variations on this. Here’s my favorite. (No picture, I gobbled it all before I thought of it.)

Massaged Kale Salad with Lime Cilantro dressing

2 bunches kale, destemmed and chopped
1/4 cup chopped cilantro
juice of 2 limes
1 tablespoon lime zest
1 tablespoon agave nectar
sea salt
olive oil

Massage the kale with a drizzle of olive oil and sprinkle of salt until the kale is limp and brilliant green.
Whisk together the remaining ingredients along with a 2-3 tablespoons olive oil and another pinch of salt (to taste). Drizzle the dressing over the kale and mix well. Enjoy!

    I’ve seen that popcorn around, been wanting to try it. I may just have to now, along with your dressing. LOVE KALE!
