Here’s something pretty special!

The Happy Herbivore books have been well-used in our home, my parent’s home, and my brother’s home as well. We love the recipes! Also quick and easy and tasty! Who could ask for more?!

Lindsay Nixon, the author, has come up with another great book filled with recipes and workout plans to stay healthy and happy!

The book doesn’t release until December, but today I have a great recipe preview, and short interview with Lindsay!

Fresh Spinach: What inspired you to focus your fourth book on a whole healthy lifestyle and not just recipes?
Lindsay Nixon: I was very much inspired by my meals plans (getmealplans.com). While the recipes in this cookbook are different than the recipes I provide my clients through my meal plan service, I used the same approach: caloric density. More food, less calories. Focusing on ingredients that are satiating, and so forth.
One of my missions with Happy Herbivore is to disprove all the myths that eating healthy is hard, complicated or expensive. It’s actually delicious, easy, affordable and beautiful. I think the same misconceptions exist around exercise and fitness. You don’t need a lot of time, or fancy equipment or expensive gym memberships. You can do it all in your home, in minutes a day, no matter what your starting point. I’m showing that — celebrating it — in my new book.

FS: After so many books, how do you find the inspiration for new recipes? What is your process of developing such great dishes?
LN: I treat it like a job. When I’m writing a book I spend 8-10 hours in the kitchen every day trying new things. I’ll often grab an ingredient, say a red pepper, and think, “okay… what can I do with this?”

FS: What is your favorite recipe in the book?
LN: Asking a chef to pick a favorite recipe is like asking a parent to pick a favorite kid :P

FS: What is your advice for anyone just starting to explore a plant-based diet?
LN: Just do it. Take it a meal at a time. Don’t worry about things off in the distance like a wedding 2 months from now. Don’t fuss with trying to be perfect. Just eat plants. Make the next item you put in your mouth a plant food. :)

Blueberry Yogurt Muffins
Makes 12
Soy-free, Fat-free, Quick

If I had to pick a favorite kind of muffin, I think blueberry muffins would be it for me. With their hint of lemon, these muffins make me think of sunny, relaxed mornings. I also love that they’re made with vegan yogurt (a boost of protein!) and very little sugar.

2 c white whole-wheat flour
1 tsp baking powder
½ tsp baking soda
pinch salt
¼ c raw sugar
1 ripe (spotted) banana
½ c vanilla nondairy milk, divided
6 oz vegan yogurt (plain, vanilla, or blueberry)
¼ c unsweetened applesauce
1 c blueberries (thawed, if using frozen)
3–4 tbsp lemon zest

Preheat oven to 350˚F. Line muffin tin with paper or silicone cups or use a nonstick pan, and set aside. In a mixing bowl, whisk flour with baking powder, baking soda, salt, and sugar. In a small food processor or blender, whiz banana with 1⁄4 cup nondairy milk until silky smooth. Stir into flour mixture, then add yogurt, applesauce, and remaining nondairy milk. Stir a few times, add blueberries and lemon zest, and stir gently, folding in blueberries, until just combined. Spoon into muffin cups and bake 15–20 minutes or until muffins are golden, firm to the touch, and a toothpick inserted in the center comes out clean.
